Spinach rolls

- Crack the egg and only use the yolk: set it aside in a bowl or glass.
- Defrost the spinach in the microwave.
- Cut the sheet of puff pastry into 2 x 8 small rectangles. You may also prefer larger rectangles and so cut them into 2 x 7 or even 2 x 6 rectangles.
- Place some baking paper on to a baking tray (you may find there is some baking paper included with the pastry, depending on the brand).
- Assembly
- Place one of the pastry rectangles on a chopping board (or two, one next to the other, if the board is large enough).
- Place a slice of raw ham lengthways on the pastry rectangle. It's fine if it overlaps the edges, as that part will becomes crisp in cooking. Depending on how much ham you have left, just a half slice will be enough.
- Place a tablespoonful of spinach on the upper half of the pastry rectangle, and spread it over that half. The reason why you should avoid getting spinach on the lower half is because when you roll it out (from top to bottom), the spinach will spread out over that half too. .
- Roll it from top to bottom without pressing too hard. Try to avoid letting too much spinach ooze out from the sides and particularly try to avoid it getting underneath the pastry.
- Put the rolls on the baking paper on the baking tray. It's best to place them with the pastry join at the top, otherwise the rolls may split open during cooking.
- Brush the rolls, including any ham sticking out at the sides, with egg yolk.
- Cooking
- Pre-heat the oven to 150°. Put the rolls in to cook. It's best to cook them for most of the time at a medium heat, e.g. 150°, and then for 10 minutes at 200-250°.
- Serving
A really simple recipe and quick to make. Just a few ingredients and not much to do. The rolls can also be eaten cold.

No accompaniment needed. The rolls already contain meat and vegetable. A salad would go nicely with them.
